My List of Movies To See With a Bottle of Prescription Antidepressants Handy

Some people hate watching tearjerkers, I on the other hand seem to actively seek them out. Some are good, some are bad, but all go on my list of movies to never watch again. Here is the list of the good ones along with a 5 point rating scale of Wellbutrin doses needed to stop the tears afterward.

These are not my top six; these are just six I've managed to not completely block from my memory.

The Mist

- 100% chance of horrible feeling in the pit of your stomach.


The Boy in the Striped Pajamas

Nobody Knows (Dare Mo Shiranai)

- Basically take what will kill you and back it up a little. This film will have you in tears for at least the entire runtime. The fact that it is NOT a work of fiction doubles the effect.

Chili's Southwestern Egg Rolls

I am a pretty big fan of Chili's, and I definitely love their Southwestern Egg Rolls appetizer. I found this copy cat recipe that is pretty spot on...the only change I made was when frying them, I used about an inch of canola oil in a skillet and rotated the egg rolls instead of immersing them in oil. I made a double batch and keep them in the freezer to eat periodically, which works great if you don't have the ingredients on hand.


1 chicken breast fillet
1 T. vegetable oil
2 T. minced red bell pepper
2 T. minced green onion
1/3 c. frozen corn
1/4 c. canned black beans, rinsed and drained
2 T. frozen spinach, thawed and drained
2 T. diced, canned jalapeno peppers
1/2 T. minced fresh parsley
1/2 t. cumin
1/2 t. chili powder
1/4 t. salt
dash cayenne pepper (or substitute paprika)
3/4 c. shredded Monterey Jack cheese
5 - 7" flour tortillas

Avocado-ranch dipping sauce
1/4 c. smashed, fresh avocado (half an avocado)
1/4 c. mayonnaise
1/4 c. sour cream
1 T. buttermilk
1 1/2 T. white vinegar
1/8 t. salt
1/8 t. dried parsley
1/8 t. onion powder
dash dried dill weed
dash garlic powder
dash pepper

  • Preheat bbq or indoor grill to high heat
  • Rub chicken breast w/ some vegetable oil and grill 4-5 minutes per side or until done. Lightly salt and pepper each side while it cooks. Set aside.
  • Preheat 1 T. vegetable oil in a medium-size skillet over med-high heat
  • Add red pepper and onion to pan and saute for a couple minutes until tender
  • Dice cooked chicken into small cubes and add to pan. Add corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt, and cayenne to the pan. Cook another 4 minutes. Stir well so the spinach separates and is incorporated into the mixture.
  • Remove the pan from the heat and add the cheese. Stir until the cheese is meltes
  • Wrap tortillas in moist cloth and microwave on high for 45 seconds or until hot
  • Spoon approximately one-fifth of the mixture into the center of the tortilla. Fold in the ends and then roll the tortilla over the mixture very tight, and pierce with a toothpick to hold together. Repeat until you have 5 egg rolls. Arrange on plate or in a plastic resealable bag and freeze for at least 4 hours--overnight is best.
  • Prepare the avocado-ranch dipping sauce by combining ingredients in a small bowl
  • Preheat 4-6 cups of oil to 375 degrees
  • Deep fry the egg rolls in the hot oil for 12-15 minutes and remove to paper towels or a rack to drain.
  • Slice each egg roll diagonally lengthwise and arrange on a plate around a small bowl of the dipping sauce. Garnish the sauce with the chopped tomato and onion (optional).
Serves 3-4

The Best Pork Chops You'll Ever Cook...



Seriously. These are great. Fast and easy...from Giada De Laurentiis!

Ingredients

  • 2 large eggs
  • 1 cup dried Italian-style bread crumbs
  • 3/4 cups freshly grated Parmesan
  • 4 (1/2 to 3/4-inch thick) center-cut pork loin chops (each about 10 to 12 ounces)
  • Salt and freshly ground black pepper
  • 6 tablespoons olive oil
  • Lemon wedges, for serving

Directions

Whisk the eggs in a pie plate to blend. Place the bread crumbs in another pie plate. Place the cheese in a third pie plate. Sprinkle the pork chops generously with salt and pepper. Coat the chops completely with the cheese, patting to adhere. Dip the chops into the eggs, then coat completely with the bread crumbs, patting to adhere.

Heat 3 tablespoons of oil in a very large skillet over medium heat. Add pork chops, in batches if necessary, and cook until golden brown and the center reaches 150 degrees, about 6 minutes per side. Transfer the chops to plates and serve with lemon wedges.

What I Learned At Disney World...

I'm a huge fan of the Disney empire. My fiance and I have the act of visiting Disney World down to a science. I just returned from a trip and decided to compile a list of things I learned from my interactions there.

1. There are people in this world who find no shame in using a motorized scooter or being pushed in a wheelchair while in perfect health.

2. The concept of grabbing a Fast Pass to get on a ride and using the upwards of 2 hours to do other things at a theme park rather than waiting in line is regularly lost on people. I had the pleasure of hearing several guests berate a Disney cast member because they were so appalled that he had let Fast Pass holders in front of them, the poor stand-by line guests who had waited hours to ride Buzz Lightyear's Space Ranger Spin. I overheard one guest claim that she felt so insulted because she's been coming to Disney World since she was 2 years old. Well ma'am, Fast Passes were instituted in 2000 you've had nearly a decade to catch on.

3. Excessive documentation of events is seriously annoying trend. Who needs 30 pictures of the Pirates of the Caribbean ride? Do people not understand that digital pictures of 3D movies just aren't going to come out? There is an announcement before every ride and show, in 3 languages, that the taking of flash photographs is prohibited! I understand people wanting to take pictures or videos of themselves and others on rides, but no one will want to see all the pictures or videos you took of "It's A Small World" and I highly doubt you will ever look at them again. Having flashes go off during a ride or show ruins the environment for everyone else, put your cameras away until it's through.
